Becky's Sugar Cookies

Delightfully soft sugar cookies.

Ingredients
  

  • 1 Cup Butter at room temp
  • 1 Cup Granulated Sugar
  • 1 Large Egg at room temp
  • 1 Tbsp Pure Vanilla
  • 3 Cups All-purpose flour scooped and leveled
  • 1/2 tsp Salt

Instructions
 

  • Start by combining the flour and salt in a medium bowl. set aside. In the stand mixer, beat your butter and sugar until it's very light and fluffy. I usually do this for about 8 minutes. Add in the egg and vanilla and combine well. Then slowly add your flour and mix until the dough comes together. Do not overbeat this. We don't want a tough cookie.
    Remove the dough from the bowl and lay it out on a floured surface. Roll your dough, lightly dusting it with flour when necessary. I like a 3/8-inch thickness. It's a nice bite size and texture.
  • Cut your cookies with a well-floured cutter. I love metal cutters but you can use whatever you have on hand. For my LOVE cookies, I used an Alphabet set which I found here. The number of cookies you get will depend on the size of the cutter you use.
    Place each cookie on a parchment lined sheet pan taking care not to crowd the cookies. You want plenty of airflow around the cookies. Place the entire pan into your freezer for a minimum of 1 hour. I leave mine in overnight. I feel I get the best bake result by doing this. When you are ready to bake, leave your sheet pan in the freezer while you preheat your oven to 350℉. Bake the cookies for 22 minutes. Any longer, and they will be crispy. If that's what you like, then go for it but I do not recommend more than 24 minutes. These are a thick cookie and baking too long will make them too crispy. Once they are baked, allow them to cool completely before decorating.
    You can use your favorite decorator icing.

Notes

These cookies may be a little more advanced with the equipment that I use, but the recipe is simple, and so delicious.  You can decorate them any way you want.  They are even delicious without the icing.  Pair it with a cup of your favorite tea for a nice afternoon snack.
